RESULTS

 

                Microorganisms isolated from Shawarma samples: The results of isolation of some species of microorganisms from 30 Shawarma samples collected from different 5 restaurants Al-Quwayiyah governorate, Riyadh region, Kingdom of Saudi Arabia revealed that, a total of 30 samples from 3 bacteria were isolated are recorded(Table-2). In the present study the restaurants were chosen because of people in these localities are more exposed to bacteria, which may transmit to them from foods, soil or hands of workers and also from person to another. Shows the bacteria isolated from ready to eat samples (Shawarma) include Escherichia coli, Staphylococcus aureus, Salmonella Spps. Salmonella was positive in 2 samples from 30 represented (6.6%) of the total samples, while E. coli was positive in 2 sample, represented (6.6%) and Staphylococcus aureus was isolated from 1 sample represented (3.3%) of the total samples (Table-3).

On the other hand we can divide the isolated bacteria from ready to eat samples into:

Gram negative bacteria: isolated from ready to eat samples (shawarma) are: Escherichia coli, (Figure-3 Figure-4 and Figure-5) Salmonella (Figure-6 and Figure -7) Gram positive cocci: Isolated from ready to eat samples (shawarma) are: Staphylococcus aureus (Figure-8 and Figure -9).

 

It was noticed that the samples of traditional foods included many bacteria not isolated from the samples collected from fast foods such as Clostridium perfringens, Acetobacter spp., Bacillus coagulans, Erwiniacarotovora, Flavobacterium Klebsiellapneumoniae, Lactobacillus plantarum, Leconostocmesenteroides, Microbacterium spp. Micrococcus spp., Pseudomonas Fluorescens, Pseudomonas putrefaciens, Streptococcus, Lactis, Streptococcus thermophilus and Achromobacter spp.
